Blueberry Crumb Bars

I was digging around the freezer and found some frozen blueberries.   Lately, I have been trying some new gluten-free, egg-free and dairy-free recipes, but I wanted to make something easy, tried and true... and also DELICIOUS!  This is another classic recipe I should write down for the kiddies.  I have been making these squares for over 5 years!


Blueberry crumb bars came to mind.  I wasn't in the mood to make yummy blueberry muffins.  


I must thank Allrecipes.com for the wonderful selection of recipes.  What makes this website invaluable is the number of ratings and reviews for each recipe.  Reading the reviews from people who have made this recipe makes a world of difference for those who wonder if the recipe is good.  Looking at my binder full of printed recipes, I saw that it has been a while since I made Blueberry Crumb Bars.   I have brought these to potlucks and social gatherings with requests for this recipe.  

This recipe is very easy to put together.  I decreased the sugar and used butter instead of shortening.  The butter makes them smell scrumptious while baking!


Make the dough with a pastry blender and pat half of the crumbly flour mixture into a 9x13 greased pan.  Lightly pat the crust and smooth it evenly with the back of a tablespoon.


Next, spread the blueberry/sugar/cornstarch mixture evenly on top of the dough.  


Spoon the remaining dough evenly over the berry layer and pop in preheated oven. 


Bake in 375F oven for about 45 minutes or until top is slightly browned.  

The combination of butter, juicy blueberries and crunchy crust makes this an addictive square.  They may not look fancy but after one bite, you will want to reach for another one!

Blueberry Crumb Bars

1 cup white sugar (I used 2/3 cup)
1 teaspoon baking powder
3 cups all-purpose flour
1 cup shortening (I used butter)
1 egg
1/4 teaspoon salt (optional)
1 pinch ground cinnamon (optional)
4 cups fresh blueberries
1/2 cup white sugar (I used 1/3 cup)
3 teaspoons cornstarch 

Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch pan.

In a medium bowl, stir together 1 cup sugar, 3 cups flour, and baking powder. Mix in salt and cinnamon, if desired. Use a fork or pastry cutter to blend in the shortening and egg. 
Dough will be crumbly. Pat half of dough into the prepared pan.  

In another bowl, stir together the sugar and cornstarch. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer.

Bake in preheated oven for 45 minutes, or until top is slightly brown. Cool completely before cutting into squares.

To make them prettier, I dusted the blueberry bars with powdered/icing/confectioners' sugar.  Nessa brought these squares to her class for Snack Day with some strawberries and carrot cake.  She told me that everyone LOVED them!

Gluten-Free & Vegan Blueberry Coffee Cake, or not - Refined Sugar Free

Most of the time, my baking is dictated by what I need to use up before it goes bad.   I had some leftover blueberry pie filling after making some braided crossover blueberry strudels (as shown in the red bean puff pastries entry).  I was going to make a Cherry Sour Cream Coffee Cake with the leftover blueberry pie filling, but I had a sudden urge to try make a coffee cake that was gluten-free, egg-free, dairy-free and refined sugar free.  What a challenge!


Success!  Things worked my way!  Very easy to whip up and versatile for an after school snack or afternoon coffee or tea break.  My 5-year old Nessa helped me make this.  I had to add this recipe to my repertoire.  I will make again! 


Instead of cow's milk, I used unsweetened Coconut Dream.  The flaxseed replaces the egg and maple syrup is used instead of refined white sugar.  Being lazy, I did not want to blend my own gluten-free flour.  I used Bob's Red Mill Gluten-Free All Purpose Baking Flour in my pantry.  I had a package of this and didn't like the flavour of this chickpea flour blend.  I am so glad I gave this another try! 


This is originally a vegan whole wheat blueberry muffin recipe. Luckily, I was able to modify this to be gluten-free and in a pan for a lovely coffee cake.  I sprinkled some coconut sugar and cinnamon on the top of the batter before baking.  Next time, I will combine the sugar and cinnamon together before sprinkling for a prettier presentation.  I will also try make blueberry muffins too.  

If you do not have to go egg, dairy and/or gluten-free, you can use two eggs, cow's milk and whole wheat flour. 


I was impressed how soft and fluffy it turned out!  Not crumbly at all.  I would not have known that this was gluten-free and vegan.    

Gluten-Free Vegan Blueberry Swirl Coffee Cake, or not
makes 1 8"x8" pan and 1- 7"x3" loaf pan

1/4 cup ground flaxseed or 2 eggs
1 3/4 cup Bob's Gluten-Free All-purpose Baking Flour or whole wheat flour
1/4 tsp xanthan gum, if using Bob's Gluten-Free All-purpose Baking Flour
1/2 teaspoon cinnamon
1/4 tsp salt
1 cup dairy or non-dairy milk (I used unsweetened Coconut Dream)
1 tablespoon apple cider vinegar or lemon juice (I prefer lemon juice)
1/4 cup vegetable oil
1/2 cup maple syrup (I used 1/3 cup maple syrup, since my blueberry pie filling is already sweetened)
1 tsp vanilla extract
2 tsp orange zest (I used 1/2 tsp lemon extract + 1/4 tsp orange extract)
1 1/2 cups blueberries, fresh or frozen (I used roughly 1/2 cup leftover blueberry pie filling)
optional:  brown sugar or coconut sugar, cinnamon sprinkled on top

Preheat oven to 375F.  Line 1- 8"x8" square pan and 1- 7"x3" loaf with parchment paper.  Or line muffin tin with paper liners.  

Mix together milk and vinegar or lemon juice in a measuring cup.  Set aside

In a large bowl, combine the dry ingredients:  flaxseed, flour, baking soda, xanthan gum (if gluten-free), cinnamon and salt.  

Add the maple syrup, oil, vanilla and orange zest to the milk/vinegar mixture.  

Stir the wet ingredients into the dry ingredients with a spatula until just moistened.  Fold in fresh or frozen blueberries.    

Scoop batter in prepared pans or muffin cups.  If using blueberry pie filling, dollop by tablespoonfuls all over the pans and swirl around with a butter knife.  

Optional:  sprinkle the top of the batter with sugar and cinnamon.

Bake about 15-20 minutes, until toothpick comes out clean.

[Edited to add] As the cake sat a few hours later, the texture was still soft and fluffy, but the taste of the chickpea flour and ground flaxseed gave the cake a strong aftertaste.  This recipe is worth another try with a different gluten-free flour blend.

Overnight Steel Cut Oats and My Favourite Healthy Breakfast

In the New Year, I thought it would be nice to make a better effort to eat less sugar and processed food.  I wanted to try make steel cut oats a part of my breakfast since oatmeal has so many health benefits.  


Steel cut oats are not rolled and they look like broken up bits of brown rice. They take much longer to cook than old-fashioned rolled oats but that is part of its beauty.  Since they are less processed, they take longer to digest and keep our blood sugar even.


According to the package, it takes about 10-20 minutes to cook.  Our busy mornings do not afford this time, so I make a few days worth the night before using an easier method. Whenever I have time (in the afternoons or right before bed), I take 1 cup steel cup oats and 2.5 cups of water.  I like the 1:2.5 ratio.  I like my oatmeal with a little bit of a chew.  


Bring to a boil, cover and simmer on LOW for only 5 minutes


Oops!  I didn't turn down the heat low enough and it boiled over.  


Just a peek at the oats after simmering for a few minutes. 

Turn off the heat and let it sit on the warm burner overnight or for several hours until cool enough to put in the fridge.  That's it!  I don't have time to wait for 10-20 minutes for breakfast in the mornings.  Reheat oatmeal in the microwave and eat it the same manner as regular oatmeal.  One serving is 1/2 cup cooked steel cut oatmeal.    

Note:  If you like the texture of your steel cut oatmeal to be a harder/chewier or softer/mushier, adjust the cook time and the amount of water to your preference.   


Steel cut oats have become my favourite healthy breakfast in the new year.  This is what I normally do:  I warm up some oatmeal with brown rice protein powder and nondairy milk in the microwave.  Then top with fresh or thawed frozen blueberries, a tablespoon of ground flaxseed, and sweetened with a teaspoon of raisins and a dash of cinnamon.  



I was able to find unsweetened brown rice protein powder as an alternative because I have an egg and dairy intolerance.  I am hoping this food intolerance is just temporary!  

Everything in my "breakfast bowl" can be swapped for different toppings and ingredients as desired.  This oatmeal provide a nice base for a healthy, sugar-free breakfast.  

The combination of protein powder and oats gives me the energy needed to get the kids out the door and my day started.  I found that just 1/2 serving of protein powder (half the amount to make 1 protein shake) was enough to give the oatmeal the last power til lunch. Without protein or some sort, I was ravenous within 2 hours.  

Overnight Steel Cut Oats

1 cup (8 oz) uncooked steel cut oats
2.5 cups (20 fl oz) water

Bring water and steel cut oats to a rolling boil.  Simmer on LOW for 5 minutes.  Turn off heat and leave on warm burner overnight or for a few hours until cooled.  Refrigerate.  Makes at least 3 cups of cooked oatmeal.  Reheat and serve like regular oatmeal.  

High Protein Berry Steel Cut Oatmeal

1/2 cup (4 oz) cooked steel cut oats
1/2 serving (15g)  protein powder (I use brown rice protein powder)
2-3 Tbsp milk as needed (I use rice or almond milk) 

1/2 cup (4 oz) berries (fresh or frozen and thawed)
1 Tbsp ground flaxseed
1 tsp dried fruit bits (cut dates, prunes, raisins, etc for added sweetness)
optional:  drizzle of maple syrup if not sweet enough

Mix 1/2 cup steel cut oatmeal with 1/2 serving protein powder and 2-3Tbsp milk, as needed to dissolve the protein powder.  Cover and reheat in microwave for 30 seconds or until warm.  Top with 1/2 cup fresh or thawed frozen blueberries, ground flaxseed, dried fruit and a dash of cinnamon.  


I know this is not the prettiest bowl of oatmeal, but it is so hearty and fills this busy mommy's tummy for the crazy day ahead!

Whole Wheat Blueberry Honey Bran Muffins

Trying to eat better is always a struggle!  I strive for balance and moderation. The cupcakes are a great treat and fundraiser but we can't that all the time or it wouldn't be special anymore.  Looking around the web, there is a wonderful movement for eating real food.  Food that is unrefined, unprocessed, made from scratch and organic.  

So I tried to look for a bran muffin recipe that was: 1) simple and easy  2) didn't use white sugar or white flour and 3) healthy.  I came across the Eat Clean Diet website for Blueberry Bran Muffins and had to give it a try! 


They turned out beautiful!  Maybe it's just me, but I thought they were a little on the sweet side.  Hubby didn't complain that they were too sweet.  Nor did the kids.  Next time, I will try use 1/3 cup honey instead of 1/2 cup and see if anyone notices the difference. 

Whole Wheat Blueberry Honey Bran Muffins

Makes 1 dozen
1 1/2 cups wheat bran
1 cup skim milk (I used 1% buttermilk)
1/2 cup unsweetened applesauce
1 egg
1/2 cup honey (Next time will try 1/3 cup)
1/2 tsp vanilla
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt (I used 1/2 tsp )
1 cup blueberries (fresh or frozen) (I used 1.5 cup)

Preheat oven to 375F.  Line or spray muffin tins with oil. 

Mix together bran and milk - let stand 10 minutes.

In a large bowl, mix applesauce, egg, honey and vanilla. Sift together flour, baking soda, baking powder and salt, make a well. Add wet ingredients to the dry ingredients, stir until combined. Add bran/milk mixture and mix until just blended. Fold in blueberries.

Scoop into muffin tins and bake for 15-20 minutes, until the tops spring back when lightly tapped.

It's so rewarding to watch my family enjoy these muffins.  It keeps me going.  I try my best, but I won't feel guilty for the odd bag of potato chips and a rum (Malibu!) and Coke after a rough day!

Blueberry Muffins

Blueberry muffins are a classic staple in our household.  When blueberries are in season and on sale, I buy as much as I can and freeze them on cookie sheets so we can enjoy them year-round. 


I have made many muffins and realized that I learned how to make muffins way back in my Grade 8 Home Economics class.  In just a few short years, my kiddies will be old enough to make this! 

Muffins are easy to make but I was in search of a recipe that was fluffy, fruity, lightly sweetened, moist and not dense.  My old stand-by recipe was pretty good but not as moist as I would have liked.   Then I decided to try the Blueberry Muffin recipe from The New Best Recipe cookbook as posted on www.simplyrecipes.com.  I needed to use up some plain yogurt.   

Boy, was I surprised how moist and fluffy they turned out!  Almost as fluffy as a cupcake, yet still a muffin.  Of course, I didn't follow the recipe exactly but close enough to get what I was looking for.  I never would have thought that plain yogurt is the trick! 


The batter was thick and fluffy due to the plain yogurt. 


A small sized ice cream scoop made the job so much quicker and easier.  


I was able to make 12 regular and 16 medium sized muffins from one recipe. 


I filled the muffin cups right up to the top.  I also dusted them with a bit of cinnamon sugar before baking.


Finished product!  Look how they rose and browned nicely. MMMmm... 

Blueberry Muffins

3 cups of all-purpose flour
1 Tbsp baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
10 Tbsp unsalted butter, softened  (I used 1/2 cup non-hydrogenated margarine)
1 cup sugar (I used 1/2 cup brown sugar, 1/2 cup white)
2 large eggs
1 1/2 cup plain yogurt
1 teaspoon grated lemon peel (I used 2 tsp vanilla extract instead)

2 cups blueberries
1 Tbsp flour (if using defrosted frozen berries)
 1 Tbsp white sugar  (optional cinnamon sugar for lightly sprinkling tops before baking)
1/4 tsp cinnamon   

Adjust the oven rack to the middle-lower part of the oven. Preheat oven to 375°F.

Whisk together the flour, baking powder, baking soda, and salt and set aside.

In a large mixing bowl, cream butter and sugar together, beating until fluffy. Add eggs one at a time, beating until incorporated after each one. Beat in the grated lemon peel (or vanilla).

Beat in one half of the dry ingredients until just incorporated. Beat in one third of the yogurt. Beat in half of the remaining dry ingredients. Beat in a second third of the yogurt. Beat in the remaining dry ingredients and then the remaining yogurt. Again be careful to beat until just incorporated. Do not over beat. Fold in the berries. If you are using frozen berries, defrost them first, drain the excess liquid, and then coat them in a light dusting of flour.

Use standard 12-muffin muffin tins. Coat each muffin cup lightly with olive oil or grapeseed oil using a pastry brush, or with a little butter. Or use one of those convenient vegetable oil sprays. Distribute the muffin dough equally among the cups. Sprinkle tops with a little cinnamon sugar, if desired.  Bake until muffins are golden brown, about 25 to 30 minutes. Test with a long toothpick (we use a thin bamboo skewer) to make sure the centers of the muffins are done. Set on wire rack to cool for 5 minutes. Remove muffins from the tin and serve slightly warm.


Yield: Makes 12-16 muffins. (I was able to make 12 regular and 16 medium sized muffins with this recipe.  I normally check the muffins after 15 minutes and then every 5 minutes until done, as every oven is different).
